Ingredients
6 large granny smith apples, peeled and cored
1/2 cup brown sugar
1/2 cup sugar
1 tablespoon flour
1/2 teaspoon salt
2 teaspoons of lemon zest
3/4 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon cold butter
Double All Butter Pie Dough
Directions
Preheat the oven to 375 degrees. Cut the apples into 1/8" thick slices, and place in a large mixing bowl. Add the next 7 ingredients, and toss the apple mixture gently with your hands so as not to break the apple slices. Roll out the first pie dough into a circle 12" in diameter, and place over a greased 9" round pie dish. Prick the bottom of the dough with a fork about 15-20 times. Add the apple mixture to the pie dish. Cut up the tablespoon of butter into small pieces and scatter over the apples. Roll out the second pie dough, and cover the apples. Trim and crimp the edges of the dough. Make slits in the top of the dough for ventilation. Bake on a baking sheet on the middle rack of the oven for 1 hour. Allow to cool completely before serving. If you're anything like my Paw Paw, you'll serve with a large slice of cheddar cheese on top.
