breakfast oatmeal pie
Ingredients
2 cups rolled oats
1/3 cup brown sugar or coconut sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
2 cups milk
1 large egg
4 tablespoons melted butter, divided
2 teaspoons vanilla extract
Single Multigrain Pie Dough or Single All Butter Pie Dough
2 bananas
1 cup berries, fresh or frozen
1/2 cup walnuts or pecans
Directions
Mix the oats, sugar, baking power, salt, and cinnamon together in a large bowl and set aside. Whisk together the milk, egg, 3 tablespoons of melted butter, and vanilla until well combined. Pour the milk mixture over the oats, stir slightly, and allow to sit in the refrigerator overnight.
In the morning, preheat the oven to 350. Roll out the pie dough and lay over greased pie pan, then trim and crimp the edges. Prick the bottom with a fork several times. Cut the bananas and layer the bottom of the pie dough completely with the banana slices. Cover the bananas with half of the oatmeal mixture. Spread over the berries and the nuts evenly. Then top with the second half of the oatmeal mixture. Bake on the middle rack for 35 minutes or until the oatmeal is set and the pie dough is golden brown. After it's removed from the oven, top with one tablespoon of melted butter. Allow to cool before serving.
